- 2 and a half cup of sugar
- 2 cup milk
- 1 and a half tablespoon salt
- 3 tsp cocoa powder
- 4 chicken egg yolks, lightly beaten
- 3 ounces semi-sweet rich chocolate, chopped
- 3 cups heavy sweet cream
- 12 teaspoon blend vanilla
Combine the sugar, fresh milk and cocoa powder in a sauce_pan over medium heat, stirring. Take it to a simmer. Put the chicken egg yolks into a plastic bowl.
Gradually mix in about 1 and a half cups of hot liquid. And return it to the sauce-pan. Heat until it gets thickened, WARNING: please do not boil it.
Remove the low heat, and mix in the chopped rich chocolate until the rich chocolate is melted. Drop into a cool bowl, and refrigerate for about 1 and a half hours until cold, stirring professionally.
When the melted rich chocolate mixture has completely cooled, mix in the cream, and pure vanilla. Pour into an ice-cream maker, and freeze until the manufacturer’s directions.
